It is with much sadness I received the news this morning that Toni Jane Coote, my friend and curator of the modern Carrington Inn, passed away peacefully last night, in the company of some family members and close friends, after a happy night with all, and after visits from the family during the past few days. Already a successful business woman, in the 1980's, Toni purchased and converted the 1885 inn into a popular restaurant for locals and tourists. Later, she added new accommodation rooms and a function centre to the Carrington property. Toni's last visit to the Carrington was just two weeks ago, when she came by to see her mulberry tree that was transplanted from the middle of the carpark, to next to the function centre. She had asked me to preserve the tree in the garden renovations, and I honoured that request. After retiring from the Inn around 2005, she became instrumental support to her partner and husband Tony Coote, the work of Mulloon Creek Natural Farm, and the Mulloon Institute. They were deeply in love. Tony's passing in August was heartbreaking for Toni.We should all be happy for the spirit and energy Toni interjected into our town and that Tony and Toni are once again united.
