For 131 years, the Carrington has been a work in progress; constantly evolving to fit the changing needs and expectations of travellers. The Inn does not aspire to have 5 so-called Stars, unless they are in the Southern Cross that hangs above it at night. No, the Inn is about wholesome and genuine hospitality that makes people feel comfortable and welcome when they are away from home. Hospitality that makes them feel better when they leave than when they came.

Upon your arrival, you will be greeted by a warm and congenial Guest Service staff member, who is eager to get you settled as soon as possible. As you walk under an open verandah to your room, you’ll begin to shrug off the burdens of work or travel.
On the way to your room with windows that open to fresh air and the sound of native birds, you may smell fresh mown grass and fragrant vintage roses and lavender growing along the path for you.
After you refresh in your room, stroll through Elm Park, the Inn’s private garden on your way to The TOM WILLS Tavern for some refreshing drinks and tapas share-plates, or the Wintergarden dining rooms for a wholesome and satisfying meal. A Guest Service Assistant would be happy to provide you a tour of the Inn and share with you some of the background information about the 130-year-old property.

Executive Chef Andrew Stansbie, hails from Plymouth England and has extensive experience preparing fine food around the world. Andrew joins the Wintergarden after senior positions with the five-star Swissotel and Fairmont Resorts group.
He has a passion for all aspects of food excellence, be that fresh local ingredients, preparation that retains flavours and nutrition, or plate presentation that makes a guest feel special. This passion has led to the winning of several awards for his restaurants including the Readers’ Choice Award by Condé Nast Traveller’s Magazine 2011, 2012 and 2013.
What brings him to the Carrington Inn is another passion he has long had, and that was to live in Australia, and we are all the better for that. As Andrew gets familiar with our indigenous ingredients we will be seeing and tasting some new world-class culinary delights.
Andrew has stated, “I’m excited to be part of the Carrington Inn team and part of regional Australia. My wife, Merili, and I are looking forward contributing our knowledge gained from around the world to the Carrington Inn and the uniquely diverse Australian culture”.
